Carter Country ground beef is one our favorite products to cook with. Whether your using it simply for burgers or pasta sauce its always a quick and easy fit. CCM Ambassador Austen Granger took our 14 day dry aged ground beef and put a twist on and old favorite - MEATLOAF.
INGREDIENTS
Meat Loaf
- 2-pounds carter country 80/20 ground beef
- 1-pound ground pork
- 2 potatoes finely diced
- 1 large yellow onion chopped
- 2 scallions chopped
- 4 gloves garlic chopped
- 1 chicken bouillon cube mixed with ½ cup water
- 1 red bell pepper finely diced
- 2 eggs beaten
- 1 Tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- ½ cup panko breadcrumbs
- Olive oil
Panko Topping
- 1 cup panko breadcrumbs
- 4 Tablespoons unsalted butter melted
- 1 teaspoon dried thyme
- ¼ cup grated parmesan cheese
- 1 teaspoon smoked paprika
- Salt to taste
- Black pepper to taste
COOKING INSTRUCTIONS
Panko Topping
- Add panko to a medium mixing bowl.
- Melt butter to a small saucepan over medium low heat and melt. Allow to cool for 5 minutes.
- Add melted butter, dried thyme, parmesan, smoked paprika and salt and pepper to panko.
- Mix to combine and set aside.
Meatloaf
- Preheat your oven or pellet smoker to 350 degrees.
- In a skillet heat, 1 tbsp Olive Oil over medium-high heat. Add your diced onions, diced potatoes, diced red pepper, dried thyme, oregano, kosher salt, and pepper. Sauté until slightly caramelized. About 8 to 10 minutes.
- Add your chopped garlic and sauté until fragrant.
- Add the chicken stock, Worcestershire sauce and cook until the liquid has mostly evaporated, and the mixture has thickened. About 3 to 5 minutes.
- Take mixture off heat and allow to cool for 20 minutes.
- In a large bowl, add your ground beef, ground pork, chopped scallions, smoked paprika and breadcrumbs.
- Beat the two eggs and add to bowl.
- Add the onion, potato, pepper mixture to bowl being careful not to over combine. Lightly incorporate all ingredients by hand.
- Place the mixture on a cookie sheet lined with parchment paper and form into an even loaf.
- Evenly top the loaf with the seasoned panko breadcrumb mixture.
- Place the meatloaf into your preheated oven or pellet smoker set to 350F and cook for 1 hour or until the internal temperature registers 160F in the thickest part of the meat loaf.
- Remove from oven or grill and allow to rest for 10 minutes before slicing.
