Made from 100% dry aged, Carter Country grass fed beef, this savory sausage gets its sweetness from maple syrup. Normally, you have to mix pork fat into a summer sausage to add moisture and flavor. That’s not how we do things. Thanks to our signature process of raising older cows, our grass fed animals live longer and have the ability to naturally gain more fat on their bodies. This golden fat allows us to make the world’s most delicious summer sausage made from nothing but happy, healthy, grass fed cows, raised right on our ranch in the Big Horn Basin. 


Our summer sausage is great to give as a gift or to take for a day pack. We suggest letting it warm to room temperature before slicing.


PLEASE NOTE: Our Summer Sausage contains milk as a binding agent. If you are lactose intolerant or have a food allergy to lactose, please take this into consideration.

Our grinds

Our dry aged ground beef is not a bi-product, but a highlight of our program. Made from a majority of chuck, brisket, and steak trim, Carter Country ground beef is aged for a minimum of 14 days to maximize our signature grass fed flavor. We now offer a variety of our ground products for individual sale including One Pound Pillow Packs, Summer Sausage and Bone Marrow Broth. Keep your eye on this section of the site, as it will be update periodically with flash sales and new products as they become available.
