Where Carter Country Meats Began: One Ranch, and the Data That Made the Case

Most premium-beef stories start with a label. Ours starts with a ranch.

RC Carter runs a 40,000-acre operation in the Big Horn Mountains near Ten Sleep, Wyoming. He's ranched there for decades - through droughts, price collapses, and every variable that tests a rancher's resolve and ledger alike. Several years ago he made a decision much of the industry would have called impractical: he changed how he managed his land.

No more synthetic inputs. Rotational, adaptive grazing - high-intensity grazing over short periods, with ample rest between. Practices designed to keep root systems intact, organic matter building, and water infiltrating instead of running off. It wasn't a marketing move. It was a land decision - a bet that soil, managed differently, would perform differently over time.

He was right.

What the Data Showed

As Carter Ranch transitioned to regenerative management, soil organic matter on the irrigated lands climbed from a 1.1% baseline to 2.27% by 2020, 4.43% by 2024, and 5.0% by 2025. That's not a rounding error. Soil organic matter at that level changes a ranch's relationship to rainfall, to drought, and to the long-term carrying capacity of the land - every percentage point of organic matter holds roughly 20,000 gallons of water per acre. In a region where resilience is survival, the land was becoming more resilient.

But soil health was only half the story.

When Carter Ranch beef was tested for nutrient density, the results stood out. The omega-6 to omega-3 ratio came in around 1.9:1 - compared with roughly 8:1 typical of grain-fed beef. (That ratio shifts a little by season: greener grass lowers it, browner grass raises it.) Testing also found zero heavy metals detected. The beef wasn't just raised differently - it was measurably different in ways that matter to human health.

What RC had built, without setting out to build it, was proof.

The Question Nobody Was Asking

The regenerative space has grown fast. Labels multiply. Claims proliferate. But almost no one was connecting the soil data to the food data. Most certifications measure practices - rotational grazing, no synthetic inputs - and stop at the farm gate. They can tell you how the land was managed. They can't tell you what ended up in the beef.

Certifying the Outcome, Not Just the Practice

Eversoil Certification is built on two data streams. The first is land health: continuous ecological monitoring through Snap Lands, tracking soil organic matter, biodiversity, water infiltration, and vegetation cover. The second is nutrient density: lab testing of the beef itself, verified by the Bionutrient Food Association, Edacious Labs, and the Stephan Van Vliet Lab. When both align - healthy land producing measurably nutrient-dense beef - that's Eversoil Certified. It certifies the outcome, with the data recorded rather than claimed.
