Why this beef is different

  • Mature cows, on purpose. Most American beef is harvested at about 18 months. Ours are 4 to 8 years old - older cattle carry more intramuscular fat and more iron in the muscle, so a grass-finished steak can marble like a prime cut.
  • Double-aged. The animal, and the beef: every steak and roast is wet-aged 30 days before freezing for tenderness.
  • A full season on our ground. Cattle from neighboring grass-only Wyoming ranches arrive at the end of winter and graze Carter Ranch on a rotational plan through the whole season.
  • Better soil, measured. Organic matter on our irrigated land has gone from 1.1% to 5.0% (2025).
  • Tested. Verified by the Bionutrient Food Association, Edacious Labs and the Stephan van Vliet Lab. Our July 2026 ground beef measured an omega-6:3 ratio of 1.82:1, vs 8.28:1 for grain-finished beef in a 2026 Journal of Animal Science study.

Which steak will I get?

Every box includes a NY strip, Ribeye, or Tenderloin/Filet Mignon. The other steaks and roasts rotate with each harvest, and half the box by weight is 14-day dry-aged 80/20 ground beef.
