Most American beef comes from cattle harvested at around 18 months. Ours are 4 to 8 years old. After about 36 months, cattle start holding their fat, which is why a grass-finished steak from a mature cow can marble like a prime cut - and why this box eats differently from the beef you are used to.

Nearly all American beef is harvested at around 18 months, because young is fast and fast is cheap. Ours are 4 to 8 years old. Older cattle carry more intramuscular fat - the fat that makes beef taste like something - and they carry more iron in the muscle itself, which is why their meat is darker and richer. The American market optimized for speed. Spain and Portugal kept raising cattle to maturity, and treat that beef as the good stuff.
There is a trade-off, and we handle it with time. Beef from older animals is less naturally tender than beef from a young steer - that is the real reason the industry harvests at 18 months. We call our answer double-aged: the animal and the beef. On top of the 4 to 8 years, every steak and roast is wet-aged 30 days before freezing, which is what tenderizes it. You get the flavour of a mature animal without the chew.
Our cattle come onto the ranch at the end of winter and move across it all year on a rotational grazing plan - not a short finishing window at the end of someone else's program. They come from neighboring Wyoming ranches that raise grass-only, and they finish on Carter Ranch. We process in small batches of no more than 15 animals, so every cut traces back to the animal it came from.
Almost all beef marketing describes how cattle are raised. Very little of it can show you what happened to the soil underneath them. Organic matter on our irrigated land has gone from 1.1% at baseline to 2.27% in 2020, 4.43% in 2024, and 5.0% in 2025. It compounds - more organic matter holds more water and grows more diverse forage, which is what the cattle eat - and it takes years to move.
Nutrient density is verified independently by the Bionutrient Food Association, Edacious Labs, and the Stephan van Vliet Lab. Our July 2026 ground beef sample measured an omega-6 to omega-3 ratio of 1.82:1, against 8.28:1 for grain-finished beef in a 2026 Journal of Animal Science study.
